Fish & Chips, pure comfort food!
But then you bite through the batter and it oozes greases and oil, there is little or no taste to the hard shell and the delicate flesh inside in coated in a gloop that tastes of last weeks (and every day in between) chips.
Now this has been the story on more than one ocassion, and it leaves a horrible (literally!) taste in the mouth, and with budgets tight and the healthy option being the more preferable of late, making your own is the clever option!
Here is a beautiful and simple crumb recipe that I swear on for the perfect Fish coating.
The use of fresh herbs is essential as it really does add an extra natural seasoning to complement the fresh fish.
You can add ground nuts if you want, its all about the textures against the soft fish, and as the oats and crumb crisp to different levels, some nuts added will only add to the sensory benefits.
Coats for 2:
2 cups of Panko breadcrumbs
1 cup of Oats
1 tbsp Sesame seeds
1 tsp chopped fresh Dill
1 tsp chopped fresh Parsley
Mix all together and season with a little salt and pepper.
Toss fish in seasoned flour, egg wash and crumb, fry or oven bake until cooked.
Simple and delicious!
