Salads don’t need to be boring!
10 years ago, ordering a salad was a rare affair for those with an adventurous palate, and a bowl consisting of iceberg lettuce, chopped tomatoes, onion and cucumber was the usual suspect that turned up.
Salads are a go to lunch option for so many of us these days as we all like a bit of a health kick and something that is fast to prepare always gets the votes.
But do you sometimes struggle on getting a tasty balance that actually gets you excited to the idea of eating it?
Fear not, for I have lined up some ideas of some of my favourite combinations that are not only easy to prepare, but are texturally balanced and packed with flavours!
Chickpeas, Sautéed Chorizo, Roast red peppers & Parsley
(Tossed with smoked paprika, olive oil and a squeeze of lime juice)
Poached Chicken, Rice noodles, sliced Peppers, Peanuts, fresh Chillies & Coriander
(Tossed with a dash of Soy sauce, fish sauce and sesame oil)
Sliced Toast Turkey, Butterbeans, shredded Carrot, shredded Apple, Spinach
(Tossed with a dash of olive oil, honey & cider vinegar)
Quinoa, black beans, Blueberries, Almonds, Coriander, Green beans
(Tossed with raspberry vinegar, honey & rapeseed oil)
Soba Noodles, Fried Tofu puff, green beans, fresh chillies, Peppers, Coriander
(Tossed with sesame oil & seeds, Shoyu sauce, lime juice)
Smoked Cheese chunks, toasted Walnuts, Rocket, Sunflower seeds, cherry tomatoes
(Tossed with olive oil, lemon juice, shredded oregano, honey)
Goats Cheese chunks, Carmelised onions, Rocket, croutons, pumpkin seeds
(Tossed with Rapeseed oil, Balsamic vinegar and chopped Chives)
Feta, Sundried Tomatoes, chopped Cucumber, Spinach, Olives, Almonds
(Tossed with olive oil, shredded Oregano, honey and lime juice)
Roasted Butternut squash, Cranberries, green Lentils, Flaked Almonds, Salad leaves
(Tossed with Whole grain Mustard, cider vinegar, Olive oil)
