Lunch need not be boring anymore with this exotic cousin of the sliced pan, the Naan!
I love Naan bread with a curry, but It’s equally as nice on its own or gently warmed with some delicious toppings piled on.
Here is my all time favourite, homemade Falafel with coriander salad and shredded sesame-orange carrot salad.
It’s not only healthy but the balance between the soft bread, spiced falafel and zingy cool or range carrot salad will have your taste buds screaming!
Drizzle with some sour cream and hot sauce for an extra level of flavours.
For a more substantial meal I add some lightly stir fried veggies to the base.
1 can of chickpeas (400g)
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp Harissa paste
1 clove of garlic (chopped)
1 heaped tbsp flour
Few sprigs each fresh parsley and coriander
Chopped fresh chilli (optional-to taste)
Blend all ingredients in a blender until smooth.
Flour hands and form into 8 small patties.
Heat a drizzle of oil in a non stick pan and fry for 3-4 minutes each side.
Eat warm or cool, the choice is yours!
Carrot and Orange salad
2 medium carrots
1/2 tsp sesame oil
1/2 tsp soy sauce
Juice of 1/2 a fresh orange
Pinch black sesame seeds
